This morning I was browsing around the blogs and I was inspired by Frugal Queens Meatloaf. I knew I had some minced pork to use in the freezer so I thought I would make my own version and include a few more veggies to make my WW points go a bit further. After I had taken the first picture I added a carrot and another egg.
Using 280gm of the Pork then adding a chopped onion 2sticks of celery 1carrot 70gm breadcrumbs good sprinkle of homegrown sage salt and pepper and 2eggs, I squidged it all together by hand and popped it into a small roasting tin to bake, it smelt wonderful cooking.
The remaining 400gm of Pork had an onion 70gm breadcrumbs sage and an egg with some seasoning added, I squidged that lot together and made golf ball size lumps.
These were added to the oven with the meatloaf and baked until cooked.
They look delicious and smell heavenly!
The meatloaf will make us 2good sized dinners with some vegetables and the meatballs will be nice with some pasta and sauce, 3for me and 4 for hubby will be sufficient. All that from a pack of pork costing £1.49 plus another £1.50 for the rest of the ingredients. £3.00 divided by 8 is less than 40p per serving even with the addition of veggies and pasta it will be under a £1 per head...another winner!
